Our new farmhouse cheese, Cornish Kern, gained early recognition in 2013 when it won Best English Cheese at the British Cheese Awards – that was before it even had a name! Three years on, after much research and development, it will be ready for sale in early 2017. A hard cheese, firm to the cut, slightly flaky in the middle, we describe it as buttery with caramel notes and a deep savoury aroma. Kern is a longer maturing cheese than Yarg, and is encased in a handsome black wax coating.
Originally derived from a Gouda style cheese, we add Alpine starter cultures to create a close texture which resembles Dutch and French/Swiss cheeses. It is matured for 16 months, during which moisture retention is rigorously controlled. The black coating gently breathes, enabling the naturally forming mould to develop and aid maturity.
Wrap in wax paper, store below 8 degrees, serve at room temperature. Suitable for vegetarians.
